Garlic Parsley Salmon

I made this for CJ and I the other night and it was delicious! When I first thought about garlic and salmon I was like ehh.... I don't know if those will go good together. BUT they did! This recipe is super easy, light and tasty! So- these veggies came pre-cut and seasoned and they were good but when CJ tried this he said - "I like your veggies better" so I will give you my veggie recipe for this meal.

Ingredients:
- About 4 pieces of salmon (about 1 piece per person)
- Enough olive oil to coat top and bottom of salmon
- 1-2 cloves of garlic
- Handful of chopped fresh parsley
- 3 medium sweet potatoes
- 2 red apples
- 1 sweet onion
- Couscous (or brown rice is you don't like couscous- rice takes much longer to cook)
- Garlic powder
- Salt and pepper
- Dried parsley (optional)
Instructions:
1. Preheat oven to 450 degrees
2. Boil 1 cup of water per 1 cup of couscous (don't add couscous yet!)
2. Chop sweet potatoes and apples into cubes and dice onions
3. Toss veggies in oil, garlic salt, dried parsley and salt & pepper to taste and place on baking sheet
4. Bake in oven for 20-30 minutes or until tender
5. While veggies are baking Lightly coat salmon in olive oil and salt & pepper and place on baking sheet
6. Mince garlic and chop fresh parsley- sprinkle on top of salmon
7. Bake for 12-15 minutes
8. Add couscous to boiling water- cover and let sit for 5-10 minutes
